WILD BOAR AND PORK SALAMI
Although fragrant and tasty, this salami is rooted in the most authentic rural tradition; it can dazzle even the most refined tastes. This product comes from roughly minced pork and wild boar cuts (shoulder, pork belly, and ham trimmings), seasoned with the unique Tuscan spice mix. As any wild game meat, wild boar meat tends to be very lean, and as such, it dries out very quickly. For this reason, fatter pork meat is added to the mixture, making for a well-balanced and savory product. Stuffed in an artificial casing and then aged in our facility of Pontassieve (Florence). This variation weighs 500gr.
