The 3-4 kg variation of Tuscan salami is a classic of our tradition that we have produced using the same recipe for a century. The product comes from roughly minced premium pork cuts (shoulder, pork belly, and ham trimmings) with diced pork lard, which makes this product unique. The salami is then seasoned with spices, stuffed in a natural casing, tied, and dry-cured in Pontassieve (Florence) facility.
