As any wild game meat, wild boar meat tends to be very lean, and as such, it dries out very quickly. For this reason, fatter pork meat is added to the mixture, making for a well-balanced and savory product. Stuffed in an artificial casing and then aged in our facility of Pontassieve (Florence).
