“PORCHETTA” ROASTED PORK BELLY AND LOIN
This is an ancient product from the center of Italy, whose origin is disputed between Tuscany and Lazio. It is obtained from deboned pork loin, with belly included, seasoned and flavored with spices, then tied in the classic cylindrical shape that distinguishes the final product and cooked in the oven. The natural, slow cooking process, without the addition of any preservatives, is followed by a cooling process. Many variations of “porchetta” exist, which differ from the spice mix used. Our recipe features many spices, including rosemary and wild fennel.
