CURED PORK LOIN

This is one of the leanest cuts of pork: the loin is seasoned with our unique Tuscan spice mix and dry-cured without the rind. Since it is cured as the whole pork loin, its aging is much longer than tenderloin. This dry-aged product features a fine slice characterized by compact and uniform color and delicate flavor.
